Ingredients vary, but most include vinegar or tomato paste (or a combination) as a base, as well as liquid smoke, onion powder, spices such as mustard and black pepper, and sweeteners such as sugar or molasses.
Generally, barbecue sauces is categorized into four varieties: tomato-based sauces, vinegar-based sauces, mustard-based sauces, and mayonnaise-based sauces. Each category can have a range of BBQ sauce styles, ranging from sweet and tangy to hot and spicy.
Water must cover jars by 1 inch. Adjust heat to medium-high, cover canner, and bring water to a rolling boil. Process pint jars for 20 minutes, adjusting for altitude. Turn off heat and remove cover.
It's all relative, but most pitmasters agree that balance is key to a great barbecue sauce. Most sauces are made with a tomato base, vinegar, some sweetener like honey or molasses and an element of heat. From there, sauces are fine-tuned with spices and flavors, such as mustard, garlic, fruit and smoke.
Spices: With big bold flavors, the subtly of spices in bottled sauces tends to get lost. Adding garlic or onion powder are standard flavors for barbecue, but get a little creative and try out different chile powders, peppers, cumin, or dried herbs to add body to the sauce.
In a medium saucepan, stir together all of the ingredients: tomato sauce, tomato paste, apple cider vinegar, maple syrup, molasses, Worcestershire, smoked paprika, dry mustard, garlic, salt, black pepper, and cayenne pepper. Bring to a simmer over medium heat.
Found in the eastern half of both North and South Carolina, Eastern-style vinegar sauce has the unique honor of being the oldest barbecue sauce in the country. Given its origin in the 13 colonies, it's literally where American barbecue was born, at the hands of enslaved chefs.
An excellent alternative to the barbecue sauce is this Asian sauce made from vinegar, honey, sesame paste, flour, chilies and soy sauce. Known for its texture and the thick glazed appearance like the BBQ sauce, the Chinese-inspired Hoisin sauce is excellent for the ones who love spicy baby ribs.
Our four tried-and-true sauces are the Carolina Mustard Sauce, Memphis Sweet Sauce, Vinegar Barbecue Sauce, and Alabama White Sauce. Some basic barbecue information that's important to know is that these sauces match perfectly with certain types of meat. They go together like sweet tea and biscuits or peas and carrots.
This sweet-and-savory Homemade BBQ Sauce Recipe tastes so much better than store-bought, and it's cheaper too. Best of all, you can make it with better ingredients and fewer preservatives.
Making BBQ sauce is a lot easier than many people think. It requires only a few ingredients most people have already in their homes and minimal cooking! I prefer to make most of my condiments homemade. That way you can control the taste and quality, and it's cheaper than buying store-bought versions.
You can use either flour or cornstarch to thicken BBQ sauce. Just mix together 2 tbsp (16 g) of flour and ¼ cup (62.5 mL) of water, or combine 1 tbsp (9 g) of cornstarch with 1 tbsp (15 mL) of water. Continue mixing the thickener until there are no lumps of flour or cornstarch.
Tomato base: Most BBQ sauces include a tomato base, which can be in the form of ketchup, tomato sauce, or tomato paste. The tomato base provides the sauce with a rich, tangy flavor. Sweeteners: BBQ sauces commonly contain sweeteners to balance the acidity of the tomatoes and add a touch of sweetness.
Sauces intended for grilling should contain less sweeteners (usually brown sugar or molasses) than barbecue sauces. Sugar will burn over the direct heat and leave you with a bitter taste.
It is because of the ingredients, most BBQ sauce has molasses in it, which is a by product of making refined sugar. Because of the ingredients the color is different, as it changes from the tomato like vinegar flavor towards the deep richer sweetness of molasses.
