FAQs

Is it better to make deviled eggs day before or day of? ›

I like these deviled eggs best on the day they're made. If you're making them for a party or gathering, I don't recommend assembling them more than a few hours in advance. Store them in the fridge until you're ready to eat, and wait to add the garnishes until right before serving.

Is there a substitute for mayonnaise in deviled eggs? ›

Plain Greek yogurt: a non-fat 1:1 ratio replacement for mayo that still achieves that creamy filling with tangy flavor, which I use in my Angel deviled egg recipe. Sour cream: another favorite swap when I still want that classic deviled egg that is also substituted at a 1:1 ratio.

What happens if you put too much mayo in deviled eggs? ›

Going overboard with the mayo.

But when you're heavy-handed with this ingredient, not only will it overpower the taste of the filling, but it can also make for a loose, runny filling that's tough to pipe into the egg white.

What is the best way to mash yolks for deviled eggs? ›

Peel the eggs, cut in half, and scoop out the yolks into a bowl. Set the whites aside. Mash up all the yolks with a fork and add all ingredients. I like to use a potato ricer to make faster and smoother work of mashing the egg yolks.

How many deviled eggs per person? ›

How many deviled eggs do you need per person? Plan 2 to 3 deviled eggs per person for your get-together. A dozen eggs will make 24 deviled eggs, and that will be enough for 8 to 12 people. If you have leftovers you can store them in the fridge for 24 hours and snack on them the next day.

Should you refrigerate boiled eggs before making deviled eggs? ›

If you are responsible for bringing deviled eggs, you can give yourself a head start with these tips: Boil the eggs up to 48 hours in advance. Peel, cut in half, and remove yolks. Place egg whites on tray, cover with plastic wrap, and store in fridge.

How much mayonnaise equals one egg in a recipe? ›

Eggs are a key ingredient in mayonnaise, so it makes sense that it can be a perfect substitute when you're out of eggs. Use 3 tablespoons of mayo as an egg substitute.

Why put paprika on deviled eggs? ›

Standard deviled eggs are undeniably good, but adding a touch of tomato paste and a generous pinch of smoked paprika makes them a bit more sophisticated. The flavor is gently sweet, forcefully spicy and perfectly smoky.

What are church lady deviled eggs? ›

Each half of an egg is filled pretty high with a smooth and creamy egg yolk mixture. Each deviled egg is then topped with a piece of bacon, smoked paprika, and chives. It's definitely a rich appetizer, but it's so good.

Why are my deviled eggs rubbery? ›

If you keep the heat turned up too high or too long when you cook an egg, the proteins in the egg white form more and more bonds, squeezing some of the water out of the protein network and making the egg white rubbery.

Why put white vinegar in deviled eggs? ›

A light-colored vinegar, like the white-wine vinegar we use in these creamy deviled eggs, brings a touch of acidity to the filling and balances the richness of the yolks and the mayonnaise.

How do you make deviled eggs creamy and not lumpy? ›

First she slices peeled hard-boiled eggs in half. She scoops the cooked yolks into a bowl and sets the egg whites in an egg tray. She mashes the yolks and adds mayonnaise, mustard and sweet pickle relish. She thoroughly mashes everything together so there aren't any lumps and adds pepper and salt to taste.

Why do my deviled eggs get watery? ›

When eggs are cooked too quickly, over high heat, the protein seizes as it cools and water leeches out. To prevent this error, it is best to allow the eggs to cook slowly, shock them in ice water to stop the cooking process abruptly, and then allow them to cool completely before moving on to the next preparation step.

Do deviled eggs taste good the next day? ›

As long as you store them in the fridge, you can eat refrigerated deviled eggs (or any cooked egg dish) within four days, according to the USDA, but you should aim to eat them within two days for optimal freshness. Once you take them out of the fridge, you should serve them within two hours.

How do you keep deviled eggs fresh overnight? ›

Assemble deviled eggs no more than a day in advance.

Pipe the filling to the egg whites and store them in the fridge covered in a container up to 12 hours ahead or overnight. If you make them more than one day in advance, the filling won't be its best.

Can you prep eggs the night before? ›
